Wash your hands after going to the bathroom. You’ll have more friends, and fewer strangers will judge you.
I’ve recently been trying this new “healthy” thing where I work out regularly and stay away from sugar and bread. It sucks. I ended up making cookie dough last night because I was in a bad mood and all I wanted to do was watch Gilmore Girls and eat terrible food. So that’s what I did. I don’t even remotely regret it.
Today, however, I figured I should make up for it with something healthy. So I spent about two hours on Pinterest trying to find a recipe that both sounded good and didn’t involve putting on real people clothes and going to the grocery store, before I finally ran across this gem: Chili Lime Chicken. She pairs it with a nice pineapple salsa, for which I had approximately one ingredient: pineapple. We haven’t been to the store in a while.
I knew I wanted to make the chicken, because it looked fantastic, but I needed something to go with it. I wanted to use avocado, because we had one that was a day away from going bad, and also it’s supposedly one of those “superfoods” that’s all sorts of good for you. Pinterest–somehow–didn’t have many easy, appetizing pineapple avocado salsa recipes. So I made up my own.
I broiled pineapple, corn, and onion to bring out the flavors. It made the pineapple sweeter, the onion less pungent, and I just really like roasted corn. I added spinach because I put spinach in everything: It’s good for you and there’s not much of a taste. I have yet to meet a recipe that isn’t improved with spinach. (Within reason, of course. I haven’t tried spinach cookies yet, and probably won’t in the near future.) Cucumber and avocado were added for volume and to make it even healthier. Get those veggies in.
And the lime was used to keep the avocado from browning and for a little extra flavor. The chicken turned out fantastic, as anticipated. (I substituted cumin for a mixture of of nutmeg and more chili powder, and it was definitely a good choice.) The salsa paired with it perfectly and, for the sake of rounding out the meal for my family, I made a pot of rice.
It was well received all-around–even by my father, who turns his nose up at anything green or labeled “healthy”–and my stomach wasn’t angry with me after eating my fill of it. I’d call that a success.

Pineapple Avocado Salsa
A refreshing summer salsa to accompany chicken, fish, or even just chips.
Ingredients–1/2 cup diced pineapple
–1/4 cup corn
–1/8 cup diced onion
–1/2 cup spinach
–1/4 cup diced cucumber
–1/2 an avocado
–lime juice, to taste
- Spread the pineapple, onion, and corn on a foil-lined baking sheet and put under the broiler until it just starts to brown. Remove and refrigerate.
- Cut spinach into small pieces.
- When pineapple mixture is cool, dice the avocado.
- Mix all ingredients in a medium-sized bowl, sprinkle with lime juice, and serve immediately.
